Chocolatè Crinklè Cookies

- 1/2 cup of oil
- 4 ounces unsweetened chocolate, melted
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons of vanilla extract
- 2 cups of flour
- 2 teaspoons of yeast
- 1/2 teaspoon kosher salt
- 1 cup icing sugar
Instructions
- In a large mixing bowl, beat together the oil, chocolate and sugar until light and fluffy.
- Add eggs and vanilla and blénd until sm0oth.
- Add éggs and vanilla éxtract ànd mix until wéll blendéd.
- In another bowl, combine the flour, baking powder and salt and add to the wet ingredients.
- Mix until just combined (do not mix too much) and refrigerate for at least a few hours (I have cooled during the night).
- Preheat the oven to 350 degrees. Prepare cookie cups by greasing them or lining them with parchment paper or a silicone liner.
- Roll the teaspoons of dough into small balls and cover with icing sugar. Bake f0r 10 t0 12 minutes (do not overcook). Let cool and serve.
