Chocolatè Crinklè Cookies

ingredients

  • 1/2 cup of oil
  • 4 ounces unsweetened chocolate, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons of vanilla extract
  • 2 cups of flour
  • 2 teaspoons of yeast
  • 1/2 teaspoon kosher salt
  • 1 cup icing sugar







Instructions

  • In a large mixing bowl, beat together the oil, chocolate and sugar until light and fluffy.
  • Add eggs and vanilla and blénd until sm0oth.
  • Add éggs and vanilla éxtract ànd mix until wéll blendéd.
  • In another bowl, combine the flour, baking powder and salt and add to the wet ingredients.
  • Mix until just combined (do not mix too much) and refrigerate for at least a few hours (I have cooled during the night).
  • Preheat the oven to 350 degrees. Prepare cookie cups by greasing them or lining them with parchment paper or a silicone liner.
  • Roll the teaspoons of dough into small balls and cover with icing sugar. Bake f0r 10 t0 12 minutes (do not overcook). Let cool and serve.
