Caprésé Chickén

- 1 tabléspoon. extra virgin olive oil
- 1 lb bonéless, skinless chicken breasts
- Koshér salt
- Fréshly ground black pepper
- 1/4 tsp. balsamic vinégar
- 2 clovés of garlic, minced
- 1 pt. grapé tomatoes, halved
- 2 tabléspoons. freshly ripped basil
- 4 slicés of mozzarella
Diréctions
- In a largé skillet over medium-high heat, heat the oil. Season the chicken with salt and pepper and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.
- Add thé balsamic vinegar to the pan, then add the garlic and cook until it is fragrant, 1 minute. Add the tomatoes and season with salt. Simmer until tender, 5 to 7 minutes. Stir in the basil.
- Return thé chicken to the pan and nestle into the tomatoes. Garnish with mozzarella and cover with a lid to melt.
- Placé the tomatoes on the chicken and serve.
